Vitamin-packed Pumpkin Spice Smoothie

Happy Autumn!

In my house, the beginning of Fall means two things: my house smells like warming spices and there is a ton of orange things to eat in my kitchen.

The first thing I make with that elusive can of pumpkin is my favorite orange smoothie—a slightly sweet breakfast shake infused with pumpkin pie amazingness. Most of the ingredients for this smoothie are organic and really easy to have on hand in the kitchen. It is also dairy-free and has no added sugars.

Pumpkin is packed with beta-carotenes that keep your skin, eyes, and immune system healthy. The almond milk base is a great source of calcium and vitamins A, D, and E. Chia seeds add the protein and omega-3s, while oats provide fiber to keep you full all morning. Bananas provide the potassium and B-vitamins. It’s such a healthy way to insert good fall feelings into your morning.

Recipe

  • 1/2 cup of chilled organic pumpkin (about a third of the can)

  • 1/2 a frozen organic banana broken into 1-inch chunks

  • 1/4 cup organic rolled oats

  • 1 tbsp organic chia seeds

  • 1 cup organic vanilla almond milk

  • A few sprinkles of Trader Joe’s Pumpkin Pie Spice

  • Optional: Agave nectar, honey, or your favorite sweetener if you like it on the sweeter side

Add the ingredients to your high-speed blender in the above order and blender together thoroughly. Enjoy right away before the chia seeds thicken it up or grab a spoon and turn it into a smoothie bowl.
